We are not doing the experience until it's totally safe for our guests to visit us. ​This workshop is quite interactive; you're going to actively participate in preparing the food we all are going to eat. Either you're a beginner in the kitchen or a master chef. The only thing I ask is that you're passionate about cooking. I'll share with you some stories, especially from my scouting and exploration of the state of Oaxaca, mainly from La Mixteca and the Central Valley regions. Finally, we all are going to enjoy the meals we cooked, I'll show you a couple of techniques to make your food look fantastic with little effort (food love starts with the sight!) Mexican food, thus, Oaxacan cuisine has a significant foundation on corn, so we are going to learn about this cornerstone ingredient of the local gastronomy. One important topic that will be covered it's the Nixtamal process, which is the ​cornerstone of Mexican gastronomy and culture.

After several years cooking fine dinning and living in scandinavia for some years my mind was changed.. so, I decided to go back to roots and create "The Real Oaxaca Cooking Experience" at Quinta Brava, this project tries to recover and pass the knowledge and the heritage from the real ancient Oaxaca cuisine and the magic with it, also, to show you the ancient methods and utensils that our older relatives used to use, we will cook a nice bunch of recipes form all over Oaxaca in a old fashioned wood stove called "Lorena" cause the way how is been constructed ( in Spanish "lodo y arena" in English "mud and sand") and you will be the main chef of this culinary experince, you will cook everything with your hands
