I have to say that Fabio provided one of the most unique and enjoyable experiences I have ever had on holiday. He was so generous in sharing his home and kitchen in Mazzano. He is not only spectacularly qualified as a chef, but he also has a gift for teaching his techniques and makes the entire experience memorable. There was so much learning packed into a few hours and I am convinced Fabio and his assistants can turn anyone into a better cook.
I cannot recommend this experience enough!

Couldn’t hear much of Fabio’s references to sites on drive in and he was a bit grumpy/critical at first, but he warmed up and we had a wonderful time. The food was amazing- would’ve been great to have written/printed recipes to take and was a little challenging to get answers to some basic questions that would’ve expected to be able to hear on from an experienced chef but was otherwise great hands on technical exercise and experience in his beautiful country home, and he was very welcoming into his home for us to linger for some time after.

Outstanding experience in a small village about one hour outside of Rome. We had a wonderful time with Vittoria and Roy, who were lovely conversationalists and outstanding hosts. The trip included visits to local grocers/markets, in addition to great hands-on learning for several dishes. Plenty of food (and wine) for everyone. We highly recommend this cooking lesson for anyone who is hoping to enjoy a unique experience in a place you might not otherwise visit. Truly unforgettable and well-worth the money -- easily the best cooking lesson experience I have ever had the opportunity to take.

What a fantastic experience! Chef Fabio took us to a market in the village and bought the food we needed to make a five-course meal. I had told him I made my mom’s version of spaghetti carbonara (with bacon and eggs sort of cooked) and so he made me a REAL carbonara that was the best I ever had—better than the restaurant we went to in Rome. He gave us some excellent cooking tips and now we can make the best pasta ever! He was informative and entertained us with some great stories. I highly recommend taking this lesson!!

What a great day! We shopped at local markets to get food, the chef integrated our interests into the menu and we arrived at his weekend house about an hour after leaving Rome. So far from the hustle of the city. We made sauces, pasta using different proteins. He created a side dish from the potatoes I sliced too thickly! It was a wonderful day, full of learning and laughter and lots to eat! Would highly recommend this activity!!

My wife wanted to take a italian cooking class while traveling in itLy on our 31 anniversary. We lucked out with fabio.were only couple scheduled in class. Fabio took us to his weekend apt in a 2000 year old village north of rome. We made numerous pastas and sauses from scratch. Fabio says these classes are not work but pure enjoyment for him. It shows. He's taught dr. Oz and jeff bezos, but he treated us as a special as the celebrities. This class is a must.

Fabio was charming, incredibly knowledgeable, and very patient. He guided us through the making of multiple dishes (5, I think), learning hands-on as we made pasta from scratch and gnocchi from a single potato that he bought at the local market. Mazzano Romano is a picturesque medieval village about 40 minutes outside the heart of Rome. Fabio is a great host, a terrific teacher, and now a friend.

This was such a lovely experience! My daughter and I went together and made three different pastas, a main dish, a side, and dessert. Our chef Monica was amazing and such a good teacher. We learned several new tricks to bring back home with us!

What an incredible day. We had the most delicious, and memorable time with Chef Elisa and Roy. We started off in the Roman countryside in a beautiful, small town called Mazzano Romano where we went to 3 markets; the first was to purchase our vegetables (artichokes, tomatoes, garlic, broccoliromano), the second to purchase our meats (free range chicken, beef, and sausages), and the third market was where we bought our ricotta, eggs, and bread. Then we headed to a castle built in the 1500s and made magic! We learned how to make Nonna’s Pizza, bruschetta with sausage, 4 kinds of pasta, chicken cacciatore, and chocolate lava cake. Elisa and Roy were terrific — so patient, friendly, and funny! The day was filled with learning and laughs. Definitely recommend!!!

We had a great day with Marco and Roy in Mazzana Romana. Although the same or similar classes are offered in Rome, we very much enjoyed the trip to the town of Mazzana Romana and the change from the City. All of the logistics went smoothly and on time. The shopping in Mazzana was fun and location for the lesson was charming. The food turned out to be delicious. But Marco and Roy were the best part of the trip. They were easy to be with and yet very professional. We truly did learn about Italian cooking and had a wonderful day doing it.

I had so much fun in this class! Elisa and Cornelia were both phenomenal. It's quite a drive to Mazzano Romano but the town itself is very nice and gives you a good small town feel. I enjoyed the market aspect of the tour where they will take you to a local butcher and other stores. We helped in cooking a lot of things - 6 to be exact. And since we did this on my birthday, they even baked a chocolate cake for me! I highly recommend this tour. Pro tip: try to skip breakfast if you can, you're definitely going to need the extra space!

It was fabulous! Loved the drive into the countryside, the local shopping for our meal was delightful at 3 stops. Once secured, we walked to the home of a chef and were taught as we gathered around the kitchens island. This was hands on and so delightful as we got to know each other and learn from our female chef and her 2 assistants. They were so professional, courteous and delightful! Our meal was delicious! And served In The dining room of his home—-magnificent! GRAZIE, chef Eliy!

Likely one of the tours or events we most enjoyed on our 10 day cruise and Rome holiday - Elisa and her staff made us feel extremely comfortable - The group included just myself, my wife, and my son. We were driven to a countryside town, small town of 1600 people, went along with Elisa to buy the fresh food in small shops and then made our way to the unit where we cooked - it was very comfortable and spacious enough for us to relax, drink, cook and eat the food. And the foo was some of the best I have ever had - the taste was amazing - from a real chef who knows what she is doing. Highly recommend this as an adventure you would not normally do.

This was one of the most enjoyable and fun excursions we experienced! 4 of us plus 2 chefs and sous chef went shopping for our cheese, meat, veggies and fruit which we used in our many course dinner prep. We then experienced hands-on pasta making, dessert and a meat dish preparation followed by cooking and dining on our creations with lots of wine. So much fun - we laughed and learned; all this in a village home that was several hundred years old. A leisurely pace and it was indeed hands-on. I highly recommend this excursion. Also, BUY THE COOKBOOK! You will not regret the decision to come to this cooking lesson.

Driver/supporter Cornelia and instructor Elisa set the tone for a wonderful day that was informative, relaxing, filled with laughter and stories and all the charms of the countryside. Strolling to the markets with all the local characters, wandering up the cobblestone streets with views of a lush green gorge with the sounds of a river at the bottom...there was just a bit of everything to lead the way to the course. Held in an apartment in the village with all the green picture windows it felt like being in a tree house! We made a rustic pizza first, then pasta, a meat/veg course and a lovely peach with mint fresh dessert course. Such great tips as we prepared and the small group made it just so fun and relaxing. Highly recommend...such a wonderful duo of supports/instructors in Elisa and Cornelia ..thank you both for a Fabiolous day!

We were so fortunate to find that our chef is world renowned Fabio Bongianni. We went to his 15th century home in a country village of about 1000 people, Mazzano Romano. We enjoyed going to the market to pick the fruits, vegetables, meats and many different tomatoes to make the different courses of meals. Cornelia, Fabios assistant was very charming. Fabio and Cornelia had a special rhythm that made it seem very easy. It was truly a learning experience. We went to many tours while in Rome, but I must say, this was a highlight. I want to do it again when I return. Thank you, Fabio and thank you Cornelia.
